First off : What is Chipotle?
Well, chipotles are smoke-dried ripe jalapenõ chili peppers. The name comes from the Nahuati word chīlpoctli, meaning ‘smoked chili’. It has a medium heat to it and measures between 2500 and 8000 SHU on the Scoville scale. (For reference: tabasco sauce measures between 2500 – 5000, the habanero pepper measures 100.000 – 350.000)
Chipotle sauce from scratch
It is fair to say that here at Mamacita we love things spicy and we love things smokey. So a good chipotle sauce just had to be present in some of our recipes! But at Mamacita we also have a passion for making things from scratch. Sure, we could go to the store and buy a chipotle sauce we like. But, living up to our philosophy, we went the extra mile!
So, we want to make our own chipotle sauce? Where to start… Well, let’s select some of our store-bought chipotle sauces (yes, we have a pretty big collection) and see what they’re made of. We test some different brands and styles and judge each one by their qualities: spiciness, complexity, flavor, texture, etc.
Good! Now we have an idea of what we like and of course what we want to produce. The results: We want to make a sauce which is mildly spicy, but still has a real kick to it. We want it to be fruity, but sweet. We want it to be rich with many different flavors. And because the chipotle pepper is smoky in itself and we love it for that, we decided to add some extra smokiness!
After several experiments some of which were good, some great, but none quite perfect, we kept changing ingredients and quantities until we got something that tasted just right!

Our Chipotle Burrito
Quickly becoming a favourite the Chicken Chipotle Burrito is really one to try out! We start out, as with all burrito’s, with a tortilla wrap. Another basic ingredient we use in all our burrito’s is (perfectly cooked basmati) rice. Now on the Chicken Chipotle-specific ingredients: A good splurge of fresh cream cheese is the base we use for holding all those wonderful flavours together and smoothing out the spiciness of the chipotle sauce; for meat we use our gorgeous and beautifully spiced pulled chicken; our veggies for this burrito are iceberg salad, onion, tomato, corn and beans; and then finally and in copious amounts: Our Homemade Chipotle sauce.
